There are a handful of places that deliver an authentic Italian dining experience -- Ambiente group's Pasta Fresca restaurant is one of them. Unlike some of the other Ambiente locations, Pasta Fresca is an ala carte restaurant. The pasta is good and portions are large. The actual selections vary by season; there is always a wide choice: tomato, olive oil or cream-based sauces and plenty of variety in meat, seafood and vegetables for your pasta. The Pasta Fresca location lives up to Ambiente's reputation for good beef. Most of the beef is from Argentina, but a handful of Czech-raised cuts are available. The value-for-money is good compared to other steakhouses in Prague. Daily lunch specials with a starter, main and dessert, are a good value; you can choose one, two or all three courses. The wine list contains some very good Italian wines -- some come at a price -- but there are a handful of good but inexpensive choices, too. Service is friendly, and can be slow during peak times -- perhaps not the ideal place for a quick meal, but dining at Pasta Fresca is savoured most when you're looking for a satisfyingly slow and casual taste of Italy. Reservations recommended.
